5 Pepper Mix combines Black Peppercorns, Pink Peppercorns, White Peppercorns, Green Peppercorns and Allspice Berries. You can use it in place of just Black Peppercorns in a grinder to add some extra flavour and spice. Use it as you would normal pepper, in the kitchen or on the dining table. When cooking with 5 Pepper Mix, grind some onto beef, chicken, fish or vegetables before cooking to bring out thee flavours. You can add more to the mix too, such as sea salt or coriander seeds to further increase the interest. We find that 5 Pepper Mix looks far more interesting in a clear grinder than just a single colour peppercorn too!
While Allspice isn’t a peppercorn, it goes extremely well with other peppers, so is a natural fit in the mix. The heat and flavour comes from a different compound than Black Peppercorns (as does the heat of Pink Peppercorns). By using a mix, you’re adding a fuller heat and flavour profile to your food, making it more complex and interesting.
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
