Fenrir is another Balefire sauce with a limit on numbers available, only coming round once a year (or less!). This one is all about the flavour and what a flavour it is. Rich ferment of red miso pairs with wolfberry, perfectly hitting the middle of savoury and sweetness. The pickled garlic adds even more complexity, as does the red wine. Heat levels are very low with this sauce, but it’s the flavour that bites here – just like the wolf God, Fenrir!
Fenrir is a complex sauce with deep umami flavours that you can pair with many dishes. Try it as a dipping sauce for far Eastern finger foods such as spring rolls, dim sum and the like. This is another one of those sauces that’s all about the discovery – it is so unique that half the fun is trying your favourite foods with it and seeing what works!
