Mango Powder comes from the dry, unripe fruits of the Mangiferia indica tree. Otherwise called Amchoor/ Amchur, this is a popular ingredient in Indian cooking, but you can use it wherever you like! The unripe fruit lends a sour note to foods, with some sweetness in the background. The fragrance is still that of mango but the flavours are more complex. It is great for adding lots of flavour to foods without adding liquid, as using juice would.
As you can probably guess, Mango Powder is perfect for curries, chutneys and marinades with an Indian theme. But with some experimentation, you’re sure to find other foods that it can go with! Please note that it is highly hydroscopic, meaning it will readily absorb moisture from the air. If possible, keep the pack sealed as much as possible and only open it when you need it. You may find that it forms clumps in the pack, so just give the jar a shake or the pack a squeeze to separate it before use. As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
