Tellicherry Whiskey Dried Peppercorns are the dry fruits of the Piper nigrum plant. These peppercorns soak in vats of single malt whiskey for a couple of weeks before gently drying. The result is a stunning and unique product that has all the flavour complexity of Tellicherry, with the peaty, aromatic flavours of whiskey. The flavour profile pairs very well with red meats, but if you like the flavours, why not use it wherever you want. That said, the high cost of production and the resulting retail price may set this as a special occasion spice! As these peppercorns are not completely dry, they aren’t that suitable for a grinder. Instead, use a pestle and mortar to crush them up.
So what is the difference between Tellicherry and “standard” peppercorns? First off, it’s about location. Much of the world’s pepper comes from Vietnam, but these come from the Malabar coast in India. Then, the largest peppercorns of the harvest go on to become Tellicherry, which have higher oil content and so a stronger flavour. There are hints of citrus and woody notes alongside the heat from the piperine. This flavour profile is more complex and layered, giving foods an extra dimension. Tellicherry tends to be regarded as a high quality ingredient and is sought after by chefs the world over.
Alternatives are standard Black Peppercorns, Ground Black Pepper and Tellicherry Black Peppercorns.
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
