Lolton Pibil Cooking Paste is a great thing to have in the cupboard if you’re a big fan of the popular Mexican dish, pork pibil. This traditional food from the Yucatan is a slow roasted dish, characterised by it’s bright orange colour (thanks to the annatto). It has a mild heat, but heat isn’t the point here – it’s all about the flavour! The deep and delicious taste is slightly tangy and smoky and is even great just to look at! Usually, the cooking takes place in an underground pit with hot stones round it. We’re guessing most people do noy have one of those, so an oven will do. In a pinch!
Using Lolton Pibil Cooking Paste is very simple! Just marinate the pork (or chicken, other meats or veggies) in the paste as per the instructions for as long as you want. We’d always recommend overnight if possible to really infuse the flavours through the protein. Then, take some and wrap it up in a banana leaf or Corn Husk and slow cook. When it is ready, open and shred the pork (or whatever it is) and serve with tacos, wraps or whatever else you want to eat it with. As well as making pibil dishes, you could also use it to add flavour to other foods! Try some when cooking the filling for a burrito or even in a rice dish.
