AubergiNero is an unusual but very tasty pickle from Wiga Wagaa, taking inspration from the flavours of India. Aubergine and apple combine with Indian spices to create a real flavour bomb and the habanero comes in with some heat, rounding it off. This is a milder heat than you may expect from such a hot chilli – it is balanced perfectly with the other ingredients.
AubergiNero, being a pickle, is just perfect for a cheeseboard with cold cuts of meat (or vegetarian alternatives!). It pairs well with hard cheeses, but works with many others. Serve with poppadoms at the start of an Indian feast or just spread some in your sandwich if you like! This would also make a great ingredient in its own right, adding flavours to curries and whatever else you want to put it in.
