Burnt Pineapple Sauce sets our tastebuds tingling with just the name alone! The base is of course pineapple, but about 10% of the fruit gets the blowtorch treatment before going in the mix. This caramelizes the sugars and adds an extra dimension to the fruitiness. With all the effort going into the base, the chilli needed to not steal the show, so enter the jalapeno! With it’s unmistakable flavour and low heat levels, it compliments rather than dominates. It is very well considered and the addition of coriander really tops it all off. Looking for sunshine in a bottle? You found it!
Burnt Pineapple Sauce is a great all round sauce that you can use with whatever you want! The sweet, fruity flavours contrast very well with sharp cheeses such as mature cheddar or stilton. It makes pork and chicken dishes sing, too, especially if you give it a splash before cooking! Pep up a sandwich or wrap with a layer of sauce before adding your filling to some brightness to your day!
