Grains of Paradise (Melegueta Pepper)

Grains of Paradise are the dry seeds of the Aframomum melegueta plant, which is in the ginger family and a close relative of cardamom. The name comes from past explorers describing the west coast of Africa as paradise on Earth. The seeds that they brought back with them were henceforth known as Grains of Paradise. Whether you use that name or melegueta pepper, the product is the same! A warm, surprisingly strong peppery punch gives way to hints of citrus and nut flavours. For all the strength in the flavour, the grains don’t have that strong of an aroma.

Grains of Paradise are common in West African recipes and some confuse them with Alligator pepper. They are a good swap out for regular black pepper if you’re looking to change things up and add a new spin on your food. The spicier pepperiness cuts through more than regular pepper, standing out a bit more. They go very well with curries, stews and other meat dishes. Many people use them to flavour drinks including craft beers, cocktails and wine.
