Yellow Mustard Seeds come from the Brassica Hirta plant, or White Mustard. They have a tamer flavour than some other mustard seeds, a little sweet and a little spicy and are great for those that don’t like their food too spicy. You can easily make your own mustard sauce with them, a liquid base (water, oil or ale for example) and a pestle and mortar. Just grind them up together in a little of the liquid, move to a jar and mix in more of the base to get the consistency you want. Leave to sit for half an hour or so to allow the flavour to develop and you’re good to go. You can also add your favourite herbs such as Basil, Tarragon and Sage to make it your own, or even add more whole seeds for crunch.
Yellow Mustard Seeds are also perfect for making marinades, pickles and sauces, and in herby crusts for meat and fish. You can toast them to mellow the flavour some more or fry them in oil to impart flavour. There are so many uses for them and if you like the flavour they give, you can try them in all kinds of foods!
