Green Cardamom Pods come from the Elettaria Cardamomum plant. They have an aromatic scent very much like eucalyptus, a zesty citrus taste and have many uses in the kitchen. As they can be a little spicy and sweet at the same time, they are perfect for use in creating or adding flavour to a wide range of dishes. Popular uses are in flavouring rice, meats, vegetables and biscuits and they’re also a key ingredient in some teas and mulled wines. Green Cardamom Pods are great for Indian cooking, adding flavour and depth to curries, chutneys and much more. They are even great for adding an extra dimension to ice creams and chocolate desserts. They are, however, one of the more expensive spices in the you can get, but not as expensive as Saffron and Vanilla.
These are the Green Cardamom Pods, which differ from the Black Cardamom Pods you can get. Farmers harvest the green ones before maturity , whereas they take the black ones much later, drying them over a fire. Black pods have a darker, smokier flavour and are not a good replacement for green pods. You’ll find these pods in some of our spice blends such as Ras-El-Hanout and Korma and Tikka Masala Curry Powders.
