Black Cardamom are the seed pods of the Amomum subulatum plant. Perhaps not as famous as Green Cardamom pods, the black version has an altogether different flavour. The taste is warming and rich, with some saying it imparts a flavour almost akin to smoky bacon to dishes. They are popular across India and Africa, adding a wonderful depth to many dishes and are perfect for vegetable recipes. The pods can also go into blends such as Garam Masala to add more layers of complexity.
Black Cardamom Pods are great in rice and dal dishes. Try grating some over roast vegetables (sweet veg such as carrots, sweet potato and sweet pumpkins work very well!). This is a great ingredient to get creative with in the kitchen too. Why not try grinding and adding some to homemade burgers, nut roasts and more. Black Cardamom goes very well in Indian side dishes and street foods such as samosas and onion bhajis.
