Vanilla Pods are the dried fruits of the Vanilla Panifolia, an orchid native to Mexico and Belize. These are one of the most sought after sources of vanilla due to it’s high vanillin content. What can we say about the taste of vanilla? We’re sure you’re familiar with it and would agree that it is amazing in both taste and aroma – sweet, caramelly and lightly floral. It’s no wonder Vanilla Pods are in great demand for both the culinary world and the perfume world. High quality pods have a scent that that is beyond just the vanilla you’d expect. There are floral notes as well as slightly woody or spicy tones, depending on where they grow and the nutrients available to the plant.To use Vanilla Pods, carefully slit it down the length, open it up and scrape out the small seeds inside using the tip of a knife. Add them to the recipe, be it for ice cream, custard, cakes, biscuits and more. Don’t throw the pods away when you’re done, either! You can store them with some sugar to infuse it with flavour, or in some vodka to make vanilla vodka. Always store in a cool, dark place to preserve the quality. During storage, you may notice tiny white spots on the outside of the pod. This is usually the vanillin seeping through the pod skin and is in no way a problem.
