Demerara Sugar is a product of the sugarcane plant Saccharum Officinarum, a perennial grass harvested for its juice. They are a very important crop to many industries, but the main one is sugar production. The sugarcane is cut, washed and pressed to extract the juice which is then boiled to purify it. The juice is then seeded with sugar crystals, causing more to grow which are then separated with a centrifuge. The resulting sugar with some molasses content is Demerara Sugar and it goes through no more processing. It is this that gives it the characteristic flavour of mellow caramel that many people love. The larger crystals are also great in baking as they produce more crunch than regular sugar.

You can find Demerara in use with many foods, especially in biscuits, cakes and lots of other sweet treats. You can add some to honey to create a sticky glaze for roast pork, and some bar tenders use it in drink to counter strong spirits. The molasses content adds a delicious flavour to many foods, but as it is a sugar, you should still be careful about consumption. Demerara goes through less processing than other sugars and retains some vitamins and minerals, but not in the quantities that make a significant difference to nutritional values. We find the taste and crunch is why people buy Demerara, and that is reason enough! Other great tasting sugars we have are Tonka Sugar, Cinnamon Sugar and Coconut Blossom Sugar.
