True Ground Cinnamon is a spice that comes from the inner bark of several tree species in the genus Cinnamomum. Sometimes, people call True cinnamon (Cinnamomum Verum/ Zeylanicum) Ceylon Cinnamon due to its origins in Sri Lanka. Much of the cinnamon in commercial use today comes from a few other species and is more correctly called Cassia, or Chinese cinnamon, among other names.

Cinnamon grows for 2 years before the stems are cut off at ground level, with more stems growing from the roots in the following years. The outer bark is scraped off while the inner bark is still wet. Workers then evenly beat the branch with a hammer to loosen it, and then the inner bark peels off in long rolls, 0.5mm thick. The cinnamon then dries completely over the next four to six hours, naturally curling up into rolls. These are then cut into the familiar cinnamon sticks, usually between 2 and 4 inches long or ground into a powder.

True Ground Cinnamon has a sweet, woody, warming flavour with some spice to it. It is a very popular ingredient in many sweet dishes including cakes, biscuits, muffins, apple pies, crumble toppings, and more. Cinnamon is also great for adding flavour to curries, tagines, stews and porridge. As with any spice, add a little at a time as you don’t need much. You can always add more if you need to, but you can’t really take it out again.
