Black/ Brown Mustard Seeds are the dry seeds of the Brassica Juncea or Brassica Nigra plants. They are different from Yellow Mustard Seeds in that they are hotter and spicier and more suitable for dishes with strong flavours. Use them whole or grind them up to release a more punchy taste in your food. Add to bread recipes, rice and grains, season fish, chicken and pork or make up pickles and chutneys that will bite back!
Of Course, Black/ Brown Mustard Seeds make a great mustard sauce. Grind them up with a little liquid (water, ale, wine) and make into a paste. Then, add more of the liquid until you reach the thickness you want and transfer into jars to stand for a while for flavours to develop. Why not add other herbs and spices to make your own custom concoctions?
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
