Tellicherry Black Peppercorns are the dry fruits of the Piper nigrum plant. What spice cupboard would be complete without black pepper?! Its use is almost ubiquitous across the globe and, with salt, forms the basis of many seasonings. Use to season pretty much any food, or add to spice blends, rubs, marinades and much more.
So what is the difference between Tellicherry and “standard” peppercorns? First off, it’s about location. Much of the world’s pepper comes from Vietnam, but these come from the Malabar coast in India. Then, the largest peppercorns of the harvest go on to become Tellicherry, which have higher oil content and so a stronger flavour. There are hints of citrus and woody notes alongside the heat from the piperine. This flavour profile is more complex and layered, giving foods an extra dimension. Tellicherry tends to be regarded as a high quality ingredient and is sought after by chefs the world over.
Alternatives are standard Black Peppercorns, Ground Black Pepper and Smoked Black Peppercorns.
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
