Guajillo Chillies are a fantastic ingredient and an absolute cornerstone of Mexican cuisine. These amazing chillies are not massively spicy, coming in at around 3000 – 6000 Scoville units. But its the flavour that makes it sought after! With notes of tangy fruit and green tea, the tannic smokiness really adds a huge amount of flavour to dishes. They’re pretty versatile as well, so it’s always good to have some on hand!
Guajillo Chillies are a traditional ingredient in Mexican red sauces and mole pastes. A common use for them is to dry toast them in a pan before soaking in hot water. This intensifies the flavours and softens them ready for blending. Add the resulting chilli paste to your dishes for instant flavour and a warming chilli hit. There are so many Mexican recipes that use then in various ways. Whether you’re adding flavour to a stew in winter or give yor summer BBQ a kick, guajillo chillies are a super ingredient!
Other great dried chillies we have include Ancho Chillies, Cascabel Chillies, Pasilla Chillies and the ever popular Chipotle Morita.
