Ghost Chillies are an interspecific hybrid chilli variety, being a mix of Capsicum Chinense and Capsicum frutescens. They are exceptionally hot, with an top heat level tipping 1,000,000 on the Scoville heat scale. For comparison, Jalapeno chillies are around 5,000 and Cayenne chillies are 20,000. These chillies are not to be toyed with! As with many dry chilli varieties, individual pods may vary in their heat levels. This comes from differences in cultivation such as water availability, nutrients and even height above sea level. The typical range of these peppers sits around 550,000 to 850,000 which is still incredibly hot.
Ghost Chillies are perfect for adding a huge smack of fiery heat to your foods, if that’s your thing! You can add directly to a curry or soup for example, let it sit throughout cooking, infusing flavour and heat, before you remove it at the end. Alternatively, soak in some hot water to reconstitute, chop up and stir into the food if you want to eat them. We also have Cayenne Chillies, African Birdseye Chillies and Kashmiri Chillies if Ghost Chillies sound too hot!
The heat from chillies is a subjective thing we find; what some may find too hot, others may find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add more, but taking heat out is difficult if not impossible. Having too much of this chilli can quickly make it inedible for some people.
