Mayordomo Chocolate is a premium brand of para mesa (table chocolate) from Oaxaca, Mexico. It is considered to be an authentic Mexican hot drink, all while using just 4 ingredients. These are ground and blended into a paste and pressed into bars (or disks), ready for use. There are no ingredients to change textures or flavours, just the raw experience as it should be! Speaking of texture, they do not dissolve the sugar in the bar, so if you were to eat it as it is, it would be rough and gritty. You can do that if you want, but that’s not the purpose! The chocolate is for making traditional hot chocolate and that’s what we recommend using it for! Of course, there are cheaper alternatives out there, but if you’re looking for a clean recipe and an authentic taste, this is a great place to start.

Mayordomo Chocolate is easy it use. Generally, you would warm some milk on the hob and melt the chocolate in it, stirring to start with. When the milk is hot enough and the chocolate is dissolved, it is best to whisk it, forming a frothy texture. While a wire whisk will do the job, you can also use a Molinillo, a traditional wooden whisk. Simply place the end of the molinillo into the milk and roll the handle rapidly between the palms. The cinnamon in the bars adds a delightful flavour that is really warming and satisfying. If you want to give the drink an Aztec or Mayan twist, add some chilli peppers to bring some spicy notes to it! You’ll have to gauge your own heat preference with that, though!
