Potato Starch is a great ingredient to have in the kitchen cupboard. It is an ideal thickener, bringing a more luxurious texture to foods. The neutral taste and high gelling qualities mean you can change the consistency without altering the taste of the final dish. This makes it very popular in kitchens everywhere, domestic and commercial.
Add Potato Starch to soups and stews to thicken and change the mouth feel. You can also use with sauces to help make them less runny, sticking better to whatever you dip in it. It is also great for use in coatings that you are going to fry as it really helps crisp things up. Commercial uses are many including controlling the melt and stretch of cheeses, improving crunch on French fries and improving perceived quality of many foods. As with any ingredient, always add a little at a time to get the flavour you want. It’s easy to add more but can be difficult or impossible to remove.
