The Aleppo Pepper is the fruit pod of a variety of Capsicum Annuum, originally from Syria, now mostly grown in Turkey. They have a sweet, complex flavour and because they are 99% free of seeds, there is very little heat. During preserving a little salt and vegetable oil are added to the chillies to preserve the natural oils in the pepper, but salt content in the final product is low, about 91mg per 100g. In Turkey, you can often find Aleppo Pepper flakes on tables with Salt and Pepper as food seasonings.
Aleppo Pepper Flakes are great for so many applications in the kitchen. They’ll raise the flavour profiles of stews and sauces, you can sprinkle them over pizzas, pasta dishes, baked potatoes with cheese, or even cheese on toast. They make a great substitute for Crushed Chillies if you want to lower the heat level but keep the flavours. Kashmiri Chillies and Kashmiri Mirch Chilli Powder have lots of flavour but very little heat, if you’re looking for another alternative.
The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add a little more if you need to, but taking heat out is difficult if not impossible.
