Chipotle Chilli Powder comes from the dried, smoked red jalapeno chillies from the Capsicum Annuum L Plant (chipotle means smoked chilli). It has become a very popular flavour in recent years and with good reason. Chipotle adds the heat you expect (about 5000 SHU), but with a rich, smoky flavour to go with it. You can use it in place of normal Chilli Powder (if it suits the recipe) to bring a different flavour to the final dish. It is great with many Mexican dishes such as tacos, enchiladas and quesadillas, but you can use it anywhere you want a bit of smoke and fire!
Smoking chilli peppers is not a new idea – the Aztec used smoking as a method of preserving the fruits. Traditionally, smoking red jalapenos takes place over 6 days in an open smoker, at a temperature between 65° and 75° degrees Celsius. The final moisture content is around 6%, and they are ground into the powder we have on sale here. Genuine Chipotle is smoked over pecan shells to get the distinctive flavour, but there are many products out there that don’t do this, and the flavour gives them away. We only source the real deal and we have a real obsession with it – even the aroma when opening the pack gets our taste buds dancing, and the flavour….. wonderful!
Chilli Heat
The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add a little more if you need to, but taking heat out is difficult if not impossible. If you’re looking for a milder chilli powder, Kashmiri Mirch would be a good option at between 1000 and 2000 SHU.
