Erős Pista is a superb sauce that is made of freshly ground, raw peppers, preserved with salt. If you know paprika, you know Hungary produces some of the worlds best, and the same is true for this. Erős Pista is a household name there and their products are popular with natives and visitors alike. The hot paprika peppers ripen under the sun on the Hungarian Great Plain before mincing coarsely to preserve flavour and heat. Heat levels are about 1000 Scoville Units, making it great for chilli lovers!
Erős Pista is, of course, great for enhancing Hungarian dishes like goulash and chicken paprikash. It can also add lots of flavour to soups, stews and vegetable broths (as well as a spicy heat). Experiment by mixing it into a curry or your own homemade sauces and any number of egg dishes. Mixing some into scrambled eggs is so good! It also works as a marinade for whatever you want to use it with. Why not add a dash to a sandwich or wrap for instant flavour and heat. PLEASE NOTE – The peppers are preserved with salt to give it a longer shelf life, but the salt will obviously be present in the final dish. Just be aware of that when adding seasonings!
The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add a little more if you need to, but taking heat out is difficult if not impossible.
