Lime Juice Powder is a handy ingredient to have in the kitchen as it will quickly add a citrusy tanginess to your foods. Lime Juice Powder is also great for Mexican and other South American cuisines. Many dishes from this region require lime juice, but there isn’t always decent limes about. This powder is actually made from Mexican limes, so it brings some authenticity with it. Great with seafood dishes and much more – make sauces, dips and dressings, add to spice blends and rubs, add to cocktails or add a pinch to tea if you like. Lime Juice Powder is made from concentrated lime juice, so a little goes a long way. 100g is equivalent to about 500ml of lime juice, or around 1.35kg of fresh lime (edible parts). There is a little maltodextrin with it, which stabilizes the powder and makes it easier to handle and dose. Start with a guide of around 2% powder to the 98% the rest of the dish. As always, we suggest starting lower than this and adding more if need be. It is easy to add more, but very difficult to take some out again.
