Lemon Juice Powder is a handy ingredient to have as it is useful in many ways in the kitchen. Add a tart, lemon flavour to dishes with a little of this powder, without the need to roll, cut and squeeze fresh lemons. Ideal for desserts and cakes, either in icing or mixed into cake batter to add flavour, or make into an ice cream or sorbet. You can also use Lemon Juice Powder alongside savoury dishes too – chicken and fish usually go well with lemon. Or, just mix some up with mayonnaise or creme fraiche to make a zesty dipping sauce.
Lemon Juice Powder is great for adding to your own custom spice blends too, adding a citrusy zing to the mix. This can be a great way of getting lemon flavours instead of using juice that may not stay put on the food during cooking. The ingredients are Lemon Juice Concentrate, Lemon Oil and Maltodextrin. The latter keeps the powder free flowing and stabilizes the lemon, which may otherwise clump together. Alternatively, we also have Lime Juice Powder and Lemon Peel Powder should they suit your needs better.
As it is a concentrated ingredient, a little goes a long way! 100g is equivalent to 560ml of lemon juice (or 1.35kg of the edible part of fresh lemon). As a rough guide, use at a rate of about 2% of the whole dish to get a good, lemony flavour. As always, we’d recommend coming in under that then adjusting to taste. It is much easier to add a little more than take some away!
