Molasses sugar is a fantastic sugar that is great for many culinary applications. This soft, moist, granular sugar retains much of the nutrients of the sugar cane plant which would otherwise be lost during refinement into other sugars. It has a wonderful, caramel like flavour that makes it perfect for baking with, making biscuits, cakes and much more. It is a popular ingredient for Christmas bakery (and cookery), adding more indulgent flavours to foods.
Molasses is also great for savoury cooking as well. Use some in barbecue glazes or marinades to add a delicious sweetness to whatever you want. You can also use it to sweeten drinks such as tea and coffee, where it also adds some flavour alongside the sweet. Molasses, with it’s higher moisture content will naturally clump together, sometimes in quite large chunks. This is completely normal and will just need a bit of breaking up before use. Finally, if you find you have molasses that may be past its best before date, you can dissolve it in water (1 tablespoon per 4 litres is a good ratio) and feed it to plants. Molasses feeds beneficial microorganisms in the soil directly, meaning they won’t tap the plant’s reserves. This means plants have more energy to grow freely!
