Mulato Chilli Powder comes from the dried, ground pods of a variety of Capsicum Annuum. A Mulato chilli is a poblano chilli that is fully mature and ripe, whereas Ancho Chilli Powder comes from poblanos from an earlier harvest. The longer time on the plant gives the dry chillies a rich, warm flavour with notes of cherry, tobacco, chocolate and licorice. You’ll find Mulato Chilli Powder in recipes for Mole sauce as well as salsa and marinades.
If you like the flavours this wonderful spice gives, you can use it wherever you want. Adding some to gravy for use with red meats would work, and you can add warmth and complexity to stews and casseroles too. The heat level is hotter than Ancho Chilli Powder, but still fairly low overall -around 5000 on the Scoville scale.
