Taste From the Ancestors is a jerk sauce that is big on flavour but mild in heat. Jerk generally uses scotch bonnet chillies to bring a serious kick of spicy heat but what do you do if you’re not a fan of fiery foods? This sauce gives you all those wonderful, aromatic flavours while being milder in heat than other sauces. There is still a bit of heat here, just in lower levels than others in the range. This sauce picked up a bronze award in the 2024 National Chilli Awards, beating some stiff competition!
Taste From the Ancestors is perfect for use as a marinade, a table sauce or even as an ingredient. For awesome Jerk Chicken, coat raw chicken or pork pieces in the sauce (we’d go generous with it!) and leave to marinate. You can cook them straight away, but letting the flavours infuse is always a good good practice. Putting the chicken in the fridge overnight is ideal if you have the time. Cook as normal, adding onions and peppers, or whatever you want to the dish. As a table sauce, use it for any food you want to add a ton of flavour and a mild hit of heat to! Finally, add some to other dishes to instantly add a Caribbean twist!
