Annatto seeds are the seeds from the Bixa orellana tree. They are a popular ingredient in Mexican, Latin American and Asian cookery. The flavour is slightly sweet and peppery with a little nutiness with a scent like peppery nutmeg. While it is great for adding these qualities to dishes, it is often used as a colouring, bringing an appealing red/ orange hue to the food.
Annatto (also called achiote) is what gives Red Leicester cheese its colour as well as some ice creams. Add to bean and rice dishes as well as soups and stews to add flavour, aroma and colours. Annatto is also great for making your own custom blends at home. Grind the seeds up and mix with other spices in whatever ratios you want. As with any ingredient, always add a little at a time to get the flavour you want. It’s easy to add more but can be difficult or impossible to remove.
