Annatto Powder is the dried, ground seeds from the Achiote tree (Bixa orellana), which is native to tropical areas of the Americas. It is a very popular ingredient across South America, the Caribbean as well as the Philippines. It creates a red/ orange colouring in sauces and will add lots of visual interest to chilli con carne, or pretty much any tomato base dish.

Annatto Powder has a sweet, peppery, earthy flavour that goes so well in layered dishes from it’s native home. You can also use it to add colour and flavour to foods such as Tandoori Chicken or mix with other herbs and spices to create a custom blend of your own. Great in stews and soups and for colouring grain dishes such as rice or couscous. Traditionally, it has been used as an insect repellent as well as a treatment for ailments such as heartburn and ulcers. The strong colour it imparts means it was an important ingredient in body paints, but we haven’t tried it ourselves. Honest!

As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
