Guajillo Chilli Powder comes from dried, ground Mirasol peppers, which is a species of Capsicum Annuum. This is a very popular ingredient in Mexican cooking and is one of the three chilli powders that make up the “Mexican Holy Trinity” along with Ancho Chilli Powder and Pasilla Chilli Powder. The Holy Trinity forms the base of many dishes and is perfect for making mole sauces. Guajillo (pronounced Gwa-Hee-Yo) is not a particularly hot  chilli, coming in around 5000 – 7500 on the Scoville heat scale. But this isn’t a chilli powder you use primarily for the heat, but the wonderful tannic, fruity flavour it gives food.

As you probably suspect, Guajillo Chilli Powder goes very well in Chilli con Carne, tacos, enchiladas and much more, or just use it in place of normal chilli powder for a change. You can make a great dip with it by stirring into mayonnaise, sour cream or any other base you like. As a rough guide, half a teaspoon is equivalent to one dry chilli. It is a shame you can’t find this spice in many shops in the UK at the moment, but it is becoming more popular. Chilli Heat

The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and blends with chilli powders in them to find the heat level you like. If you are tasting as you go, you can always add a little more if you need to, but taking heat out is difficult if not impossible.
