Ground allspice is strong, sweet and pungent and will add a distinctive flavour to your food. You can get an idea of what it tastes like by combining Pepper, Cloves, Nutmeg and Cinnamon together. Allspice is like a blend of these, all in one convenient package! Use it to flavour casseroles, stews and sausages, or to add something new to biscuits, bread and cakes. Ground Allspice is also great for making mulled wine and spiced cordials during the festive season.

Allspice comes from the dry, unripe berry of the Pimenta Dioica tree. While native to Central America, Southern Mexico and the Greater Antilles, it is now in cultivation in many of the warmer parts of the world. Farmers harvest the fruits while green and unripe, before drying them in the sun. After drying, they resemble large, brown, smooth peppercorns which is then ground into a powder.

Allspice is a staple of Caribbean cooking and is a key ingredient in Jerk Seasoning. It is also important in many other cultures cuisines including Polish, Swedish, Finnish, American and throughout large areas of the Middle East.

As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
