Apollo is a great hot sauce that uses just a few ingredients to get a superb sour, savoury taste. It is the quality of the produce that gives it the real depth of flavour, not the number. Dry roasting habaneros brings a wonderful flavour that sits wonderfully with the tomatoes. Lime juice and tamarind add the sour notes that make this a really moreish sauce that you’ll want to grab again and again. Those habanero chillies take the heat level here to a 4/5 on the Easton Chilli heat scale.
Apollo is a pretty versatile with flavours that would suit many dishes. Try it with a full English breakfast (or pretty much any dish that features eggs). It goes well with many Asian dishes, especially those that use noodles or rice as a base. Alternatively, you can use Apollo as an ingredient in its own right. Instantly add flavour, heat and depth to sauces, marinades and other foods with just a splash!
Easton Chilli started during lockdown as a start up venture in 2020, making great sauces until late 2023. By then, Rikki could not keep up with demand so he started making sauces out of a rented kitchen in Brislington. Today, he has his own purpose built kitchen and is going from strength to strength, making awesome sauces and even offering sauce making classes. After trying a few sauces at the Hot Sauce Society show, we really wanted to bring his sauces to our customers!
