Pa Lo takes inspiration from the Thai dish Moo Pal Lo which translates as “braised pork with five spice”. Think a soy sauce that has a heavy flavouring of 5 spice and you’re pretty much there! Easton Chilli take the sweet, salty and aniseed taste and blend with birdseye chilli, rice vinegar and lime juice to make a seriously good sauce. So good, in fact, that we bought it at the Hot Sauce Society after tasting it! This is a 3/5 on the Easton Chilli heat scale – some spicy heat but by no means a serious challenge.

Pa Lo Sauce is, as you might imagine, perfect with Asian dishes. Try it with spring rolls, dim sum, prawn toasts and many other finger foods. It would add a ton of flavour to Pho dishes or anything else with noodles or rice. If you’re a fan of these flavours, you could also pair it with anything else you fancy. We would recommend a little dipping bowl as it is quite a loose sauce. A small bowl means more depth and greater dunking!

Easton Chilli started during lockdown as a start up venture in 2020, making great sauces until late 2023. By then, Rikki could not keep up with demand so he started making sauces out of a rented kitchen in Brislington. Today, he has his own purpose built kitchen and is going from strength to strength, making awesome sauces and even offering sauce making classes. After trying a few sauces at the Hot Sauce Society show, we really wanted to bring his sauces to our customers!
