La Adelita Sauce from Ki’ Gourmet is an excellent sauce that is made with the ever popular chipotle chilli. It gives the sauce a deep smoky flavour but there is a sweetness that gives the sauce some balance. The sweet taste comes from the piloncillo, a raw cane sugar in use in many Central and South American cuisines. This is a very versatile sauce that you can use in many ways. Add a little to meatballs or burgers before cooking to add depth to the flavour. Mix with refried beans and add some feta cheese for a delicious snack (use tortilla chips to scoop it up) or just use as a dipping sauce for your favourite foods.
Ki’ Gourmet recommend making up a chipotle cream with cheese, butter, chopped onion and garlic, whole milk, cream cheese and chicken broth. Add a few tablespoons of La Adelita and serve. Alas, there are no measurements for the ingredients, so you may need to be creative if you want to give it a go!

The heat from chillies is a subjective thing we find; what some may find too hot, others might find tame. Therefore, you should go easy on chillies, chilli powders and sauces with chilli in them to find the heat level you like. Best not pour it all over your food before testing the heat!
