Oak Smoked Water may sound like a strange ingredient, indeed, we were intrigued the moment we learned about it. There are many liquid smoke products on the market, but the ingredients aren’t always quite what you’d expect. Lots of flavour enhancers and fillers, and other additives to create a simulation of smoke. This amazing product has 2 ingredients – Water and Smoke from oak chippings. The team at Halen Môn make it by hand in smokers on site using sustainable oak chippings.
Oak Smoked Water is a fairly strong product, so you won’t need much – start with a few drops. Generally this will add a delicious savoury flavour to your dish. As you add more drops, the smokiness will build, so it is always a good idea to taste regularly. Quickly and easily add flavour to soups and stews, marinades (especially for the barbeque), risottos and chowders. Stir into guacamole or hummus to give it a smoky twist or add complexity to a pasta sauce. As there is only water as a base, it won’t alter the flavour beyond adding smokiness. There are no extraneous ingredients that might bring undesirable tastes to the food.

As with all herbs, spices and flavourings, add just a little at a time to get the flavour you want, especially with strong flavours. You can always add more whereas removing it again can be problematic.
