Halen Môn produce their sea salt in Anglesey, Wales using hand harvesting techniques. From a salt discovered in a saucepan left to boil dry, it is now one of the worlds most premium salts. It was served at the London 2012 Olympics and is part of the menu at the Fat Duck restaurant. As with all herbs, spices and salts, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible.
