Sunray is a hot sauce that tastes like sunshine and feels like the sun on your tongue!  One of the most unusual ingredients we’ve seen in a hot sauce, the kumquat, takes centre stage here. These small, zesty citrus fruits bring a sour tartness to the sauce that is just delicious. To keep the colour bright and vibrant, yellow habaneros and Scotch bonnets go into the recipe. Not only do they add their own flavour, the spicy heat is pretty high! The sharpness of lime juice and vinegar cut through, rounding the sauce nicely. This sauce comes in as a 5/5 on the Easton Chilli scale. While fresh and fruity, it’s one to use with care!

Sunray, with its bright and zesty flavours, goes very well with smoky foods, especially meats from a barbecue. Try some with nachos and other snacks to really adds some fiery heat. Rice dishes get a good lift with a splash of Sunray, as do dishes like tacos and burritos. You could even use it to add flavour and heat to other dishes, stirring it into a sauce, marinade or soup etc.

Easton Chilli started during lockdown as a start up venture in 2020, making great sauces until late 2023. By then, Rikki could not keep up with demand so he started making sauces out of a rented kitchen in Brislington. Today, he has his own purpose built kitchen and is going from strength to strength, making awesome sauces and even offering sauce making classes. After trying a few sauces at the Hot Sauce Society show, we really wanted to bring his sauces to our customers!
