Bonnie Mango takes the popular combo of Scotch Bonnet and Mango and gives it the Balefire treatment. The fermented chillies, Kesar mangoes and lime combine to make a deliciously sweet sauce that tastes like a tropical breeze! These great flavours balance perfectly with the spicy heat, making for a taste sensation that would be great with many foods. This sauce is “medium/ hot” so try before dousing your food in it!
Bonnie Mango is a great sauce to use as a marinade for meats, either on its own or with some custom blend of spices. Of course, it’s great as a dipping sauce for your favourite foods too! Try adding some to rice or other grains for a burst of extra flavour and heat. Or, glaze some chicken wings with it near the end of cooking, or add some sunshine to your sandwiches!
Balefire is an artisan condiment producer in County Durham, run by twin brothers Pete and Jim. They combine historic and modern techniques to produce their own unique vinegars and they ferment their own chillies for several weeks. Many of their sauces feature craft beers or spirits for more complexity and layers and the attention to detail is fantastic, right down to the wax dip on every single bottle. The results are sauces of real distinction, bursting with flavours that we loved from day 1! We’re proud to be able to bring Balefire to you and we highly recommend every sauce in the range. For more information, visit the Balefire website (opens a new link in your browser).
Other great sauces from the range include Critical Masala, Ethereal, Raze the Stakes and Verde Crush to name but a few!
