Fenugreek Leaves are the dried, rubbed leaves of the Trigonella foenum-graecum plant. They have a slightly bitter taste with some earthiness. They have notes similar to that of celery, but with a little sweetness at the end. These versatile leaves are a real staple of Indian foods, but you can find then in many other cuisines too. Along with fenugreek seeds (ground or whole), this one plant gives the world a huge amount of flavour!
Fenugreek Leaves are of course, perfect for use in an Indian curry. They are also great in Thai Green Curry paste if you want to increase the flavours further. Make up a fenugreek syrup for an interesting twist on the norm (use in place of maple syrup). Alternatively, just sprinkle onto vegetables such as carrots, parsnip and potatoes before roasting.
