Rosemary is the dried, rubbed leaves from the Rosemarinus Officinalis plant and has been in use by people for over 6000 years. It is an extremely aromatic herb, with a lemon-pine flavour with hints of pepper and wood. It is a great addition to many savoury dishes including roast meats, soups and stuffings. You can also make great dressings, oils and vinegars using rosemary, where it will bring an aromatic richness. It pairs very will with other herbs such as Sage and Thyme, Marjoram and Oregano. Some desserts work well with a little rosemary too, such as shortbreads and lemon cakes.
Due to it being drought resistant, many people grow rosemary in their garden. It suits regions such as the Mediterranean and can grow for many years, becoming quite large. Upon cultivation, the leaves are harvested, rubbed and packed, ready for sale. The twigs and flowering apices are also useful for other products.
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
