Szechuan Red Peppercorns are the dried berries of the Zanthoxylim Armatum plant, also called the Winged Prickly Ash. They are strong in flavour, but not like a chilli, nor a black peppercorn as you might expect. They have a lemony, citrus bite to them that is pretty unique and very useful in authentic Chinese foods. One of the most interesting things about the Szechuan Red Peppercorns is the numbing tinglyness they give in the mouth. If you’re feeling adventurous, chew one for a little while and you’ll see what we mean – it’s a very odd feeling! Don’t worry, it isn’t like chewing a hard Black Peppercorn; these are relatively soft and have a bitter lemon flavour.
PLEASE NOTE – Szechuan Red Peppercorns have been the subject of much pesticide use in recent years, making them unsuitable for sale in Europe. Now they are available again, fully compliant with food regulations, and we couldn’t be happier! Finding these “clean” spices isn’t always easy and they’re certainly not the cheapest, but definitely worth it, we think.
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
