Asafoetida is the dried and powdered oleo gum resin of the Ferula Assa-Foetida, mixed with Fenugreek powder. It is unusual because the smell of it isn’t really to everyone’s taste (with a nickname like “Stinking Gum”, you might see why!). The flavour it imparts to food, though is more akin to an Onion and Garlic combination, and is great for lots of dishes. Use Asafoetida with red meats, fish and vegetables before cooking to give a delicious flavour. It is also great in Indian cooking, flavouring curries, cooking pastes, chutney, relishes and pickles.
Some brands bulk their Asafoetida out with cheaper ingredients such as rice flour to lower the price. Always keep this in mind when buying, not only this, but all products like it. Be careful when using Asafoetida – a little goes a long way and you don’t want to overuse it. Add a little at a time to get the taste you want. You can always add more, but removing it might be impossible!
