Bay Leaves are picked from the Laurus Nobilis tree, and packed in sealed bags for freshness. They add a lot of flavour when you include them in your cooking, even though you don’t actually eat them, much like Kaffir Lime leaves. They have an almost minty flavour with a hint of black pepper and are great in stews, pates, soups and casseroles. You can also use them with a muslin and make your own Bay Leaf Tea. Dry leaves have a more potent flavour than fresh, but make sure you remove them before serving. If someone bites into one, they have a sharp, bitter taste that can be little unpleasant. Bay pairs very well with other aromatic herbs such as Marjoram, Mexican Oregano, Rosemary and Thyme.
