Chives are the dried and chopped flower stalks of Allium Schoenoprasum plant. They have a delicate onion flavour and the green colour adds a little visual interest to food. Chives are so versatile in the kitchen, its always a good idea to have some in the cupboard. Perfect for eggs, omelettes and other egg dishes, as well as creamy sauces and dressings. You can use them in savoury baking including in breads, muffins and crackers. Pretty much anywhere where you want to introduce a little onion flavour, chives can work! They work very well with Basil, Oregano, Marjoram, Thyme, Tarragon and Parsley.
Sometimes fresh Chives are what you want, but you might not be able to get them. That’s where these come in. If you are garnishing with them, sprinkle them on in the kitchen and by the time the food is on the table, they will have warmed up and started releasing their flavours.
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
