Parsley is the dried, rubbed leaves of the Petroselinum Crispum Hortense plant. This vibrant green herb has a lovely fresh scent and a peppery, slightly earthy taste. It goes very well with a huge variety of dishes, bringing flavour, colour and interest. Use it with chicken, fish, cheese and eggs, or garnish stews, soups and salads with it. Parsley is very versatile and is a great herb to experiment with in the kitchen. You can also use it to create your own custom blends as it pairs very well with other herbs such as Basil, Oregano, Dill, Sage and Chives.
It is thought that Parsley was first cultivated in Sardinia around the 3rd century BCE. By the Middle Ages, it was in use as a herb in England and grown in many monasteries and royal gardens. Since then it has become a favourite in kitchens across Europe and the wider world.
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
