Panch Phoron is a blend of whole spices that you can fry off whenever you are ready. It is a mix of Fenugreek Seeds, Cumin Seeds, Nigella Seeds, Black Mustard Seeds and Fennel Seeds. When toasted or fried, the flavours and aromas released are just divine and will get the mouth watering in no time! Originally from East India, the blend is a staple in Bengal, Odisha, Bihar and Uttar Pradesh and much further afield.
Panch Phoron literally translates as “five spices” and is the Indian equivalent of Chinese 5 Spice – great in many dishes! To use, add a little oil to a pan and lightly toast the spices over heat for a couple of minutes. Then just add your other ingredients and cook on as normal. You can always dry roast the spices if you’d prefer for a similar result. Just add to whatever you’re cooking when they’re done. Why not try pickling with Panch Phoron? Add some to the vinegar to add a wonderful flavour!
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
