Shallot Powder comes from drying and grinding Allium ascalonicum, the French Red Shallot. In 2010, the Latin designation was merged with Allium Cepa, the common onion as it was deemed that there was too small a difference between the two species to justify a distinct name. However, shallots are milder and more delicate in flavour than an onion, with hints of garlic. This flavour difference translates to the powder too, so if you want this flavour profile, give it a try!
Shallot Powder is a perfect swap out for regular onion powder, but the difference in price can make it a tough sell. It really comes into its own if you are making dishes with a delicate flavour and you don’t want the flavour of onion to be too strong. Of course, if you’re not a fan of onion, but still want to follow a recipe, this would work for you too! As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
