Fine Cut Lemongrass is the dried, powdered stems of the Cymbopogon Citrastus plant. As you can probably guess (or you already know) it has a pleasant lemon like flavour with a hint of mint. It is very popular in Thai and some Caribbean cuisines, but use it wherever you want to! Great in Green Thai Curry (and many other curries), soups and stews or make an infusion with other herbs to make a herbal tea.
Fine Cut Lemongrass is cut like other herbs such as basil and thyme, making it easier to use than fresh, plus it lasts longer. Just be aware that there are differences in flavour between the two, much like most fresh and dry herbs. Fresh lemongrass has a brighter citrus flavour whereas the dry version is more woody and complex. Other herbs and spices that are popular in Asia include Coriander Leaf, Kaffir Lime Leaves, Chives, Galangal, Basil, Star Anise, Garlic and Turmeric, to name but a few. There are so many to choose from!
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
