Savoury (or winter savoury) is the dried, rubbed leaves of the Satureja Montana plant, which is in the same family as rosemary and thyme. This is one of those herbs that isn’t as ubiquitous as the other more popular varieties, and that’s a shame! The flavors are like a mix of thyme, marjoram and mint with subtle, earthy overtones. You can find it in Armenian, Albanian, Georgian and Iranian cuisines and is one of the principle ingredients of Herbes de Provence.
Savoury is great for combining with other herbs into stuffing mixes or custom marinades. It works well in bean dishes and, like other herbs in its family, chicken and fish. It is great for flavouring vinegars and sauces and is well worth having some on hand for your kitchen experiments. Other herbs we have include Mexican Oregano, Dill, Lemon Thyme, Sage and much more!
As with all herbs and spices, add a little at a time to get the flavour you want. You can always add more, but taking it out again can be impossible!
